A traditional Russian berry theme, such as raspberry, cranberry and strawberry, was the choice of Executive Chef Guillaume Joly as he was creating special dishes and sauces for the summer Masters of Food & Wine experience. Our sommelier, Sergei Tashkinov, has also created a masterclass for breezy cocktails with strawberries and raspberries.
The special set menu served during the cooking class and available from June 18th through June 24th:
1) Spring beetroot carpaccio, strawberry salad, beetroot leaves, baby spinach, balsamic vinegar, red onion /2009 Dolcetto d'Alba, Elio Altare, Piedmont
2) Roast duck magret, raspberry and orange sauce, cranberry relish, summer vegetable crostini, spice powder /2007 La Crema, Pinot Noir, Kendall-Jackson, Sonoma Coast, California
